This perfect hot weather soup is simply a salad in liquid form and it's so easy to make. Generally, add three parts tomatoes to one part other ingredients. You can use what you have including red, yellow, green bell peppers, onions, garlic, and cucumbers. Add any herbs you like too, such as parsley or cilantro. 3 pounds tomatoes, cored and coarsely chopped
1 seedless cucumber, peeled and coarsely chopped
2 red bell peppers, coarsely chopped
1 jalapeño, seeded and coarsely chopped
1/4 cup apple cider vinegar (most dtoxing), or sherry vinegar or red wine vinegar
1/3 cup extra-virgin olive oil
Salt and freshly ground pepper
- Combine all of the ingredients in a large bowl and refrigerate overnight, or not and skip to #2.
- In a blender, puree the vegetables until smooth. Straine the soup into a deep bowl, season with salt and pepper and enjoy.
